How to cook
Cut the onion very finely and fry it. Add the minced meat and stir, until a crumbly mixture is obtained.
Add the spices, tomato puree, chopped olives and pepper.
Stir, remove from the heat and leave the mixture to cool. Roll out the slices of bread and put the filling at one end.
Fold them into a triangle and close up the edges with a fork. The filling is thick and even if they are not closed well it will not come out.
Brush them lightly with the beaten egg yolk and sprinkle two pinches of grated cheese on top.
Bake the empanadas in a preheated oven at 360°F (180°C) for about 15 minutes.
The toaster bread empanadas are very tasty.
