How to cook
Soak the raisins in a glass of lukewarm water flavored with 1 tbsp. of rum.
Beat the eggs into a bowl, add the sugar and beat them into a fluffy mixture.
Sift the flour with a pinch of salt, baking powder, cinnamon and vanilla.
Add the dry mixture to the beaten eggs, while stirring with a wooden spoon from the bottom up. Peel and cut the apples into small cubes. Pour them into the cake mixture.
Grease and flour a 8x12″ (20x30 cm) baking pan. Pour the mixture, sprinkle the dried raisins and 1 tbsp. of brown sugar.
Bake the cake at 360°F (180°C) in a preheated oven, until it aquires a golden brown color.
Cut the cooled cake into squares.
The apple cake becomes very fluffy and delicious, enjoy it!
