Separately, beat the butter and sugar into a smooth cream. Add beaten eggs one by one while continuously whipping. To the mixture, while alternating between them, pour in the flour mixture with the applesauce and milk and mix together. Continue beating for about 10-15 minutes. Finally, mix it with the finely chopped apple pieces.
Bake the mixture into 3 identical layers in a tray, covered with baking paper and buttered. Bake it in a preheated 356°F (180 °C) oven for about 35-40 minutes. Finally, check their readiness with a toothpick. Let the layer cool and take it out of the tray.
For the cream, mix the sugar, honey and eggs in a water bath on the stove until the sugar melts and the mixture heats up well. Be careful for the egg whites not to curdle. Remove from the heat and beat with a mixer for 10 minutes until cool.
Begin adding the butter portions while whipping, until the cream is homogenized. Put the finished cream in the refrigerator to set a bit. Then, beat it well with the vanilla again. Prepare a sugar syrup by boiling the water and sugar together. Syrup each cake layer a little and stick them together with cream.
Smear the second layer with syrup, smear with the apple jam and then the cream. Cover the entire cake on the outside with cream and smooth it out nicely. You can make a decoration of apple slices dipped in sugar syrup, or other decorations of your choice.
