First you need to soak the beans in cold water and a teaspoon of salt overnight. Drain the beans in the morning. Then boil them on moderately high heat.
When they begin to soften, add the chopped onion, peeled and diced potatoes, oil, salt and paprika. Boil until the beans and potatoes are completely soft on a moderate stove.
Finally, sprinkle on finely chopped parsley and spearmint. If using dried spearmint, add it to the dish with the potatoes and the other spices.
