How to cook

Clean all the vegetables and cut them into pieces. Chop the onions and put them to fry in hot oil. After that, put the peppers in and saute them until soft.

Add the potatoes, chili peppers, salt and pre-rinsed and chopped eggplant and some peeled and chopped tomatoes. Allow to fry for 10-15 minutes, and if necessary, add 2 tablespoons of water.

Finally, add the lightly beaten eggs and spices to taste. Serve with chopped parsley and a little crumbled feta cheese.
