Then mix this with the egg whites, beaten into hard snow. Put the mixture into an oven dish with baking paper. Top with peaches that you've cut into pieces and rolled in breadcrumbs. Put the cake to bake in a moderate oven until a toothpick comes out dry when poked.
For the syrup, boil the water with the sugar and cinnamon for 5-10 minutes. Instead of water, you can use the juice of peach compote. Top the cooled cake with the hot sugar syrup.
Sprinkle the cake with a little powdered sugar if desired and serve in pieces.
