Ingredients

  • lentils - 1 and 1/2 cup
  • smoked meat - 10.5 oz (300 g) by choice, can use smoked ribs
  • oil - 3 tablespoons
  • leeks - 1 - 2 sprigs
  • flour - 1 tablespoon
  • salt
  • black pepper
  • savory - 1 tablespoon
  • paprika - eyeball it, optional

Preparation

Wash the lentils and put them to boil in enough water. Once they come to a boil, add the finely chopped smoked meat or whole smoked ribs.

In a separate pot in heated oil, fry the chopped leeks and once softened, add the flour to fry as well. Dilute the roux with a little of the broth from the lentils and pour it into the pot. If you are using ribs, remove them once boiled, debone them and return the meat back to the lentils.

Add salt and pepper to taste, savory if desired and a little paprika. A few minutes later, remove the lentil soup with smoked meat from the heat and serve slightly cooled.
