Mix all the spices for the marinade in a bowl and add the chopped chicken. Let it stand in the refrigerator for 30 minutes. Drain the chicken of excess marinade.
Make the skewers, alternating between onion, chicken, mushrooms. You can also add chopped peppers, zucchini or bacon bits if desired.
Sprinkle the skewers lightly with a little oil and bake on a preheated grill.
