  • flour - 1 2/3 cups (400 g)
  • salt - 1 tsp
  • yeast - 1/4 tsp, dry
  • water - 1 1/5 cups (300 ml), cool

How to cook

Combine the flour, salt and yeast in a bowl. Add the water and stir until you get a moist dough. Cover the bowl with plastic wrap and leave at room temperature to rise for about 12-18 hours. The cooler the room is, the longer it will take to rise.

After it rises for at least 12 hours, place the dough on a well-floured kitchen countertop, sprinkle it with flour and fold the dough several times with a spatula, because it is very sticky.

Flour your hands thoroughly while folding. Cover it with a cloth and allow the dough to rise for 1 hour. Preheat the oven to 482°F (250 °C) and place a bowl of water inside. Divide the dough into 2 equal pieces lengthwise, using a spatula or knife.

Transfer the two parts into a tray with baking paper and put it to bake until you get a brown crust.
