Ingredients

  • potatoes - 2 lb (1 kg), fresh, young
  • mayonnaise - 2/5 cup (100 g)
  • feta cheese - 3.5 oz (100 g) grated
  • milk - 2/5 cup (100 ml)
  • salt - 1/2 tsp
  • oil - 3 1/3 tbsp (50 ml)
  • parsley - 1/4 bunch fresh
  • butter - 3 1/3 tbsp (50 g)
  • water - 2/5 cup (100 ml)

Preparation

Soak the potatoes for 30 minutes in a deep pot with water. Then wash them well one by one under running water.

Cut the potatoes into halves and arrange them in a greased baking tray. Pour 4/5 cup (200 ml) of water, 3 1/3 tbsp (50 ml) oil over them and season them with salt. Bake the potatoes at 482°F (250 °C) for 30 minutes.

Whip the mayo with the milk. Add 3.5 oz (100 g) of grated feta cheese. Pour the milk sauce over the baked potatoes and serve them with fresh parsley.
