How to cook
Soak the potatoes for 30 minutes in a deep pot with water. Then wash them well one by one under running water.
Cut the potatoes into halves and arrange them in a greased baking tray. Pour 4/5 cup (200 ml) of water, 3 1/3 tbsp (50 ml) oil over them and season them with salt. Bake the potatoes at 480°F (250 °C) for 30 minutes.
Whip the mayo with the yogurt. Add 3.5 oz (100 g) of grated feta cheese. Pour the yogurt sauce over the baked potatoes and serve them with fresh parsley.
