- mackerel - 4.5 lb (2 kg) cleaned fillets
- white wine - 1 cup
- vinegar - 1 cup
- salt - 2 tablespoons
- oil - 2 cups
- bay leaf
- black pepper
- sugar - 1 tsp, caramelized, optional
Boil the vinegar with 2 cups of water and the salt and put the fish to boil for 5-6 minutes in this mixture. Then remove it and arrange it in jars.
To the vinegar marinade, add the oil, wine and spices. If desired, add the caramelized sugar. Boil again and pour the hot marinade in to the mackerel in the jars, filling them up to 2 finger widths below the rim.
Close the jars and sterilize them in a water bath for about 45 minutes to 1 hour.
