Parmesan Chicken with Oatmeal

  • chicken fillet - 2
  • olive oil - 2 tablespoons
  • eggs - 2
  • parmesan - 2 oz (50 g) grated
  • whole wheat flour - 2 tablespoons
  • oatmeal - 2 tablespoons or fine breadcrumbs
  • black pepper - to taste


Tenderize the chicken meat lightly, cut it into smaller pieces if necessary and bake for a bit on both sides in a grill pan.

Season with pepper. Prepare a batter of beaten eggs, whole wheat flour and parmesan cheese mixed with the oatmeal. First dip the chicken in flour, then in egg and finally in the parmesan.

Fry the meat in heated oil and serve with a garnish of your choice.
