How to cook
Wash and dry the pork shanks. Put all the spices in a mortar and pestle and grind them. Put the shanks in a greased oven dish in which you have placed onion rings and coarsely chopped leeks. Top the meat with the beer and rub it well with the spices. Put foil on.
Put the oven dish to bake in a moderately heated 392°F (200 °C) oven for 20-30 minutes, then reduce to 356°F (180 °C) and finish cooking for another hour and a half. Remove the foil, pour the sauce from the oven dish over the meat and bake for another 10 minutes.
Serve cut into pieces.
