Cut the bacon or ham into pieces, peel the potatoes and grate them. Heat 2/5 cup (100 ml) of oil in a pan and sprinkle it with salt.
Once the oil warms up nicely, put the potato bits and bacon in. Stir with a wooden spatula and fry for 3-5 minutes. Crack eggs on top and pour oil over them periodically to poach them.
Once the egg whites tighten, the dish is ready. Sprinkle it with paprika, a little salt and plenty of the green spices.
