Chop the onion finely and stew it in a little olive oil with the vegetable mix and a cup of water for about 10 minutes. Clean the rice, wash it and pour it into a tray, add the sauteed vegetables, spices and 3-4 tablespoons of olive oil. Add 3 cups of water and stir.

Bake the rice in a preheated oven at moderate temperature until ready. If you need to, add water so the rice doesn't end up dry. Prepare the topping - beat the eggs, combine them with the yoghurt and spread it over the rice.

Bake on the upper element only until the moussaka takes on a golden color. Those products are enough for an average of 8 servings.
