How to cook
Carefully cut the zucchini lengthwise into slices or into circles about 1/2″ (1 cm) thick. Lightly salt them and leave them for about 10 minutes to drain. Heat the oil and fry the zucchini. Place them on a paper towel for it to absorb all the excess fat.
Mash the feta cheese in a deep bowl. Add the chopped dill and 1 egg. Mix until you get a uniform mixture. Apply a layer of mixture onto a zucchini slice and cover with another slice. Repeat with the other zucchini slices until the you run out of the mixture.
Fry until golden on both sides.
