Cut the pork meat into steaks. Sprinkle them well with salt, pepper and thyme. Mix the mustard and cognac, 3 tablespoons of oil together and thoroughly coat the meat. Arrange it in a suitable greased tray and let it flavor for 1 hour.
Then pour in some water to the tray, put aluminum foil on top and put the steaks to bake in a heated 392°F (200 °C) oven until ready. Cut the cleaned onions into crescents. Put them in a pan on the stove to saute under cover with the vinegar, lemon juice, oil and salt until the liquid evaporates, about 20 minutes.
Add the honey, stir and let it saute for another 5-6 minutes. Serve the steaks topped with plenty of honey onions. For garnish, you can prepare a salad or mashed potatoes.
