  • flour - 2 lb (1 kg)
  • yeast - 1 1/3 tbsp (20 g)
  • milk - enough to dissolve the yeast
  • eggs - 3
  • oil - 2 tablespoons
  • sugar - 1 tablespoon + 1 pinch for the yeast


Dissolve the yeast in a little bit of slightly warm milk or water with a pinch of sugar. Set it aside to rise. Sift the flour in a tray and in a well in the middle, add the risen yeast, 2 whole eggs and 1 egg white, the oil and sugar.

Knead a smooth and soft dough and let it rise in a warm place. Set aside a small part of the dough and distribute the remaining dough in a greased tray.

Form oblong strips from the dough you set aside and make decorations atop the pita in the shape of ears of wheat or whatever you want.

Leave it to rest for 20 minutes and put the wheat pita to bake in a moderately heated oven until ready.
