How to cook
Wash and clean the tomatoes. Grate one of them a grater, add salt to taste and mix with the olive oil. Cut the other tomato into slices.
In the serving plate, place a little finely chopped parsley. Arrange the slices of tomato on top and add the grated tomato. Before serving, top with finely chopped parsley and garnish with pitted olives, roundly sliced.
Optionally, add a few drops of lemon juice.
