How to cook
Peel the apples and carve them out in the middle. Fill them with the marmalade and sprinkle with 2/3 cup (150 g) powdered sugar on top.
From the flour, beaten egg yolks, 1 tablespoon powdered sugar, the vanilla and butter, knead a dough. Divide it into as many parts as there are apples. Roll out each piece into a sheet large enough to completely wrap an apple.
Pinch the dough on top, to keep it from unfolding. Brush thus prepared apples with the beaten egg and sprinkle them with the sugar.
Arrange them in a buttered baking dish and bake in a moderate oven. Serve them cold.
