Heat the lard and fry the meat (which has been sprinkled with the salted flour ahead of time) in it.
Pour the meat into a container with a lid, add the onions and potatoes that have been cut into slices, stir and pour in the wine.
Sprinkle with black pepper. Cover with the lid and bake in the oven.
Mix the breadcrumbs with the grated cheese and pour this over the dish. Put it back in the oven and crisp with the lid off.
