How to cook
Clean and wash the mushrooms, remove their stems. Arrange them in a buttered tray, sprinkle with salt and black pepper.
Grind the ham, heat the milk. Braise the flour with 2 2/3 tbsp (40 g) of butter to a golden color. Pour in the flour little by little, stirring nonstop.
Leave on the heat until the mixture thickens and begins to come off the walls of the pot. At that point, add the ground ham, beaten yolks and paprika.
Fill the mushrooms with this mixture and sprinkle with the cheese. Pour on the rest of the butter and bake in a moderate oven for about 15 min.
