Pour water over the well-cleaned tripe, add salt, 1 onion head with the cloves stuck in it and boil for about 2 hours. Take it out and let the tripe cool.
Dice the ham, bacon and 2nd onion head. Add the finely chopped garlic, salvia leaves, parsley and fry.
Add the tripe that's been cut into strips, fry for a bit, add the tomato paste, diluted with 2 tbsp water, pour on the broth from the tripe and boil for about 1 hour.
Sprinkle with black pepper and before serving, add the parmesan.
