Ingredients

  • beef - 4 steaks
  • meat broth - 1 1/5 cups (300 ml)
  • onions - 4 large heads
  • oil - 2 tbsp
  • butter - 2 2/3 tbsp (40 g)
  • potatoes - 2 lb (1 kg)
  • wine - 1 cup
  • bay leaf - 2
  • black pepper
  • parsley
  • salt

Preparation

Salt and sprinkle the steaks with black pepper, fry them on both sides in oil and half the butter. Take them out.

Braise the julienned onions in the remaining butter. In a buttered tray, arrange a row of meat, a row of braised onions, a row of thinly sliced potatoes.

Salt each row separately, sprinkle with black pepper and add the bay leaves.

Pour in the wine and hot broth and close tightly with a lid. Bake in a moderate oven. Sprinkle the prepared dish with parsley.
