Sprinkle each phyllo pastry sheet with sugar water (dissolve the sugar in 1/2 cup of water).
Along the longer edge of the sheet, put a stuffing of grated feta cheese that's been mixed with the eggs. Sprinkle lightly with oil.
Form each sheet into a roll and then wrap the roll into a spiral pattern.
Place the phyllo pastries in an oven dish, sprinkle them with oil and a little warm water. Bake them until reddened.
