Ingredients

  • potatoes - 3.5 lb (1.5 kg)
  • thyme - 1 bunch
  • lemons - juice and rind of 1
  • salt
  • black pepper
  • oil - 2 tbsp
  • garlic - 1 head

Preparation

Boil the potatoes with the peels, then peel them. Leave the smaller ones whole, cut the larger ones in 2.

Place them in a tray, add the oil, salt and black pepper and sprinkle with the thyme, grated lemon rind and lemon juice.
