  • water - 1 cup (250 ml)
  • butter - 1/3 cup (80 ml)
  • flour - 4/5 cup (200 g)
  • eggs - 4
  • rum - 1 tbsp
  • oil
  • sugar


Put the water and butter in a pot on the stove to boil. After they do, add all of the flour at once and stir energetically until a smooth dough forms, that easily separates from the walls and bottom.

Remove from the stove and let it cool completely.

Then add the eggs one by one, mixing after each with a wooden spoon. Add the rum and stir again.

Use a pastry bag to form eclairs 4″ (10 cm) long. If you do not have a pastry bag, drop the dough balls in oil and fry them.
