  • eggplants - 1 jar, roasted
  • garlic - 2 cloves
  • mayonnaise - 2 tablespoons
  • salt - to taste
  • black pepper - 1/3 tsp, freshly ground


You can make this recipe very easily if you use canned roasted eggplants. If you do not have such on hand, simply roast 2 eggplants and peel them.

In a blender, combine them with salt, black pepper, the crushed garlic and mayonnaise. Blend until you get a homogeneous mixture. You can also use a hand blender instead.
