How to cook
Heat the oil in a pan, fry the onions and garlic. Add the quinoa and vegetable broth. Season with the cumin, cayenne pepper, salt and black pepper.
Bring the mixture to a boil, put the lid on, reduce the heat and saute for 20 min.
Heat the frozen corn in a pan, mix it with the drained black beans and coriander. Mix with the quinoa, stir well and serve.
