Peel the celery, potatoes and onions and cut them into fine cubes. Chop the garlic finely. Heat the oil in a pot and braise the onions for 4 min.

Add the potatoes and celery and fry on medium heat for 6 min. Add 6 1/5 cups (1.5 L) warm water and boil 20 min.

Add the garlic and salt. Remove from the heat and mash. Return back to the stove and while stirring nonstop, add the semolina.
