Beat the eggs with the sugar into a lush foam. Add the melted lard (if desired you can use oil instead) and yoghurt in which you've extinguished the baking soda. Add grated lemon rind and gradually add the flour.
Knead a soft dough, cover it with foil and leave it for 30 min.
With oiled hands, rip out a ball of dough, put a piece of Turkish delight in its center and arrange in a tray covered with baking paper. Repeat until out of dough.
Smear the cookies with a beaten egg yolk, sprinkle with sugar and bake in a preheated 338°F (170 °C) for about 25 min.
