How to cook
Salt the chicken inside and out. Grate the tomatoes. Cut the onion and ham finely and braise them with the grated tomatoes in the heated olive oil.
Let it cool and add the raisins, breadcrumbs and egg. Sprinkle with the lemon zest, oregano and crushed garlic. Stuff the chicken with this filling and sew it closed.
Rub it with butter on the outside and sprinkle with paprika. Bake in a preheated 392°F (200 °C), basting with the resulting juice periodically during baking.
