Prepare 4 heat resistant bowls. Put some crumbled brined feta into each, along with tomatoes, peppers, cut into slices and a little olive oil.
Sprinkle with cheese or parmesan on top, season with salt and bake about 20-30 min. at 356°F (180 °C) until the cheese melts but before it crisps.
Before serving, sprinkle with fresh parsley and/or oregano.
