Only choose fresh carrots that are hard and with a bright orange color. It's good to peel them before heat treatment.
Cut the carrots into round slices or strips and braise them on a moderate stove for 3-4 min. They need to soften a little but remain crunchy.
Once ready, sprinkle them with the sugar to glaze them and stir well.
You can serve them as a standalone dish or as a garnish to roasted/sauteed meats.
