Ingredients

  • potatoes - about 24.5 oz (700 g)
  • bacon - 8 slices, chopped and fried
  • apples - 1, small
  • olives - 1/5 cup (60 g), black, pitted, chopped
  • red onions - 1/4 cup, chopped
  • for the marinade
  • white wine vinegar - 1/3 cup
  • olive oil - 3 tbsp
  • garlic - 2 cloves, chopped
  • salt - to taste
  • black pepper - 1/2 tsp

How to cook

Peel the potatoes and boil them in salted water until they soften slightly but are not completely cooked. Cut them into medium sized cubes and arrange them in a tray.

Mix the ingredients for the marinade until you get a homogenous mixture, then pour it over the potatoes. Put in the refrigerator for 30 min., then stir and leave for another 30 min. in it.

When serving, sprinkle with the finely chopped apple, bacon, olives and onions.
