Ingredients

  • strawberries - 6.5 lb (3 kg)
  • tartaric acid - 1/5 cup (60 g)
  • water - 8 1/3 cups (2 L)
  • sugar - 3.5 lb (1.5 kg)

How to make

Clean the strawberries from their stems and if necessary wash and dry them. Cut them up in a large container and mix them with the tartaric acid and water.

Let them sit as is for 35 hours. Stir the mixture regularly during that time. Then strain it through a cheesecloth.

For every 4 1/5 cups of strawberry juice, add 1.5 3.5 lb (1.5 kg) of sugar. Boil the sugar and juice for 45 min., then let the syrup sit for 24 hours. Before pouring it in bottles, remove the foam that's formed on the top.

Store the bottles in a fridge or sterilize to have them last longer.
