Ingredients

  • chicken - 26.5 oz (750 g), meat
  • zucchini - 3
  • peas - 1 cup (250 g)
  • tomatoes - 3
  • rice - 1 cup
  • eggs - 5
  • butter - 1/3 cup (80 g)
  • onions - 2 heads
  • parsley - 1/2 bunch
  • lemons - 1, juice

How to cook

Julienne the chicken meat, salt it and along with half the butter bake it in a moderate oven until ready.

In the meantime, saute the finely chopped onions in the remaining butter, add the grated tomatoes, peas and saute until softened.

Add the rice and diced zucchini and saute for another 2-3 min.

Pour the vegetable mixture over the chicken meat, pour on 2 cups of boiling water or chicken broth and bake until the rice absorbs the liquid.
