How to cook

Combine the lemon rind and juice with 4 tbsp of olive oil, the garlic and spices. Cut the chicken into 2 parts, sprinkle it with thyme and the lemon mixture.

Cover and leave it to marinate in the fridge for 2 hours. Transfer it to an oven dish and sprinkle on the marinade.

Place the cleaned and chopped vegetables in another oven dish, sprinkle them with the remaining olive oil and thyme and roast them in a 370°F (190 °C) oven for 40 min. Roast the chicken as well and serve it with the vegetables and bread.
