How to cook
Boil the cleaned pork tongue in a pressure cooker, adding the spices as well. Cool the cooked tongue and cut it into slices.
Blend the egg yolks with the cream and mustard, salt the mixture to taste.
Cut the bread slices in half so you get triangles. Smear them with the cream dip and garnish with pieces of pork tongue on top.
Serve with a garnish of pickles or other garnish of your choice.
