Lava Cake

  • dark chocolate - 7 oz (200 g)
  • butter - 4/5 cup (200 g) + some more for the cake forms
  • eggs - 5, home grown
  • sugar - 1 cup
  • corn starch - 4 tbsp
  • cocoa - for sprinkling the cake forms
  • powdered sugar - for serving


Smear 3 cake forms with a thin layer of butter, starting from the bottom up and sprinkle with cocoa everywhere, scrubbing off any excess amount.

Melt the chocolate and butter in a water bath, remove it from the stove to cool it a bit. In the meantime, beat the eggs and sugar until you get a fluffy cream.

While stirring nonstop with a whisk, add the chocolate to the eggs and homogenize. Finally, mix with the corn starch.

Distribute the mixture into the cake forms but without overfilling them so it doesn't spill out during baking. Put them to bake in a preheated 392°F (200 °C) oven for 8-9 min. There are 2 other options:

If you want to prepare the chocolate lava cakes ahead of time, you can leave them in the fridge and then bake an additional 1-2 min. If freezing the forms, increase baking time by 3-4 min. - bake for about 14 min. total.
