Heat the oven to 356°F (180 °C). Mix together the honey, mustard, rosemary and thyme. Grind up the black pepper grains. Glaze the meat with the honey marinade, sprinkle with black pepper and put it in an oven dish.
Take the lid off, pour in the port and continue sauteing until the onions soften completely. Season with sauce. Cut the roasted meat into slices and distribute into 4 plates. Serve with the onion garnish and baked potatoes.
