Wash the rice and soak it in 2 cups water for 1 hour. Rinse it again and put it in a pot. Pour in 3 cups water and add the coconut oil. Boil it on low heat until the rice begins to soften.
Add the crumbled coconut cubes 15 min. before taking the pot off the stove.
Stir and let it simmer a little while longer. Serve the ready rice in bowls, sprinkled with cinnamon on top.
