How to cook
Heat the oil in a pot. Braise the mince in it until it becomes crumbly.
Add the carrots that have been grated beforehand. Pour water over everything and season with salt. Once the mince is boiled, add the vermicelli.
Toward the end of boiling, season with black pepper and sprinkle with fresh parsley.
Once the soup cools a little, thicken it with the yolk, some water and the citric acid. Serve.
