First, make the dressing. Cut the anchovies, mix them with the garlic and make a paste out of them.
Beat the egg yolks and mix them with the lemon juice and mustard. Very carefully add the olive oil and then oil at the end.
Make croutons out of the chopped bread, bake them with a little olive oil in the oven. Rip up the romaine lettuce, pour on the dressing, add the croutons, sprinkle with parmesan and serve right away.
