Wash the rice and soak it in water for about an hour. Wash the leeks, peppers and mushrooms also, clean and chop them finely. Saute the leeks in a little oil in a deep pot.

Once they begin the soften, add the peppers and mushrooms to them. After another 15 min., add the rice along with the tomato paste. If the dish seems too thick, you can also add water in the desired amount.

Once the rice begins to swell, add the olives that have been soaked in water and the peas. Leave the dish on the stove until all of the ingredients soften completely.

5 min. prior to removing the dish off the stove, season with the spices and stir. Sprinkle the cooked rice with fresh leaves of dill and parsley when serving.
