Pour a little of the oil in a pot and saute the onion, carrot and mushrooms. Once the products release their water, add the rice that's been pre-soaked in water.

Pour in about 1 cup of water and stir. Leave the dish to simmer on the heat several minutes. Once the rice softens, add the spices and remove from the stove.

Fill the cleaned and salted duck with this mixture. Once done, sew the duck closed and place it in a buttered oven dish.

Cover it with foil and bake in a preheated 392°F (200 °C) oven about an hour, then lower the heat to 356°F (180 °C), remove the foil and bake finished.find similar recipes here
