Separate the egg whites and beat them to foam. In another dish, the flour is mixed with the spices. Put the breadcrumbs in a third dish.
Dip the fish (approximately 2 lb (1 kg) fillet) that has been pre-washed and dried, in egg whites, then in flour, then egg whites and finally in the breadcrumbs.
Fry in preheated oil, drain it from the excess oil and serve.
