How to cook
Heat the oven to 356°F (180 °C). Sift the flour three times. This will allow air to get in it, and the cake will become more fluffy.
Pour about 1 1/2 cups water in a bowl. Add the coconut flakes, stevia, vanilla, olive oil and stir. Add the flour and baking powder in thin trickles, while stirring. Then beat all the ingredients very well, so there's no lumps left. It is best to use a mixer or other similar device.
If you think the dough is too thick, add a little more water, but do not overdo it. The goal is to get a thick mush. After the mixture is homogenized, leave it to rest for 10 minutes and put it into a greased and floured cake form.
Bake in preheated oven, reducing the heat a little.
