Warm up the oil in a pan and make a stuffing from the tomatoes, carrots, onions, olives, parsley and basil. Add salt to taste.

Clean and salt the fish, then put them in a pan on a large piece of baking paper so that it can be wrapped in it entirely.

To the stuffing, add crushed walnuts and fill the trout with it, put the rest of the filling on top and around the sides of the fish, and wrap the fish in the paper.

Bake at 392°F (200 °C) for about 20 minutes.
